Simple Staple Breakfast Recipes

Here is a list of my simple staple breakfast recipes I use frequently on our homestead!

ONE RISE CINNAMON ROLLS (makes 12 rolls)

Dough

  • 1 cup warm water

  • 1/4 cup warm milk

  • 1/3 cup sugar

  • 1/4 cup avocado oil

  • 3 tsp dry active yeast

    (Mix above ingredients and let this get foamy for 5 mins)

  • 1/2 tsp salt

  • 1 large egg

  • 5 cups all purpose flour

Filling:

  • 1/4 cup melted butter

  • 2/3 cup brown sugar

  • 1 tbsp cinnamon

Frosting:

  • 4 tbsp softened butter

  • 4 oz or 1/2 cup softened cream cheese

  • 1 tbsp heavy whipping cream

  • 1 tsp vanilla ext

  • 1 1/2 cup powdered sugar

Directions

  1. Mix the dough ingredients. Knead for 10 mins and let it rest for 10 mins covered.

  2. Roll out the dough onto a floured surface into a 16x9 inch rectangle.

  3. Spread the melted butter evenly on the dough and sprinkle the cinnamon sugar mixture all over the dough.

  4. Roll the dough starting with the 9 inch side. Cut 12 equal rolls with a sharp bread knife. Place into a greased 13x9 baking dish or onto a large baking sheet.

  5. Cover with a tea towel and let them rise for 45 mins.

  6. Preheat the oven to 400 degrees, bake them for 20-23 mins.

  7. While the cinnamon rolls are baking mix the frosting ingredients, I like to use my mixer with the whisk attachment.

  8. Once the cinnamon rolls are done spread the frosting evenly and enjoy!!!

GRANOLA (makes 4 cups of granola)

  • 2 1/2 cup organic rolled oats

  • 1 cup chopped walnuts or pecans

  • 1 tsp vanilla extract

  • 1/4 cup melted coconut oil

  • 1/4 cup maple syrup

  • Pinch of salt

  1. Pre-heat oven to 300 degrees.

  2. Mix ingredients and spread onto a baking sheet lined with parchment paper.

  3. Bake at 300 for 30 mins, flipping at the 15 minute mark.

  4. Let it cool completely before storing in an airtight container, stores well for 2-3 weeks.

DUTCH BABY PANCAKE (serves 6)

  • 6 eggs (beaten)

  • 1 cup milk

  • 2 tsp vanilla extract

  • 4 tbsp sugar

  • 1/2 tsp salt

  • 1 1/2 cups flour

  1. Pre-heat oven to 400 degrees with a 12 inch skillet inside the oven.

  2. Mix ingredients in the order listed above. Mix until smooth.

  3. Add 4 tbsp butter into your skillet once the oven is preheated.

  4. Once the butter melts, pour in your pancake batter.

  5. Bake at 400 degrees for 20 minutes.

*This is a large Dutch baby, you can cut this recipe in half and use an 8-9 inch skillet if needed.

MINI BANANA MUFFINS (makes 24 mini muffins)

  • 2 ripe bananas

  • 1 egg

  • 1 tsp vanilla extract

  • 1/4 cup melted coconut oil or avocado oil

  • 3/4 cup sugar

  • 2 tbsp milk

  • 1 1/4 cup flour

  • 1/2 baking soda

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1 tsp cinnamon

  1. Pre-heat oven to 350 degrees.

  2. Mix ingredients in the order below, scoop into a greased mini muffin pan.

  3. Bake at 350 for 11-13 minutes.

BISCUITS (makes 12 biscuits)

  • 2 cups flour

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1/2 cold butter cut into cubes

  • 1 cup milk

  1. Pre-heat oven to 400 degrees.

  2. Mix the flour, baking powder, and salt.

  3. Cut in the cold cubed butter into the dry mixture with a pastry cutter, or use your hands to mix and break up the butter into tiny pea sized balls. Then stir in the milk.

  4. This will be a very sticky thick mixture. For drop biscuits you may scoop out large spoon fulls and drop them onto your greased baking sheet then bake. For rolled out round biscuits pour the dough out onto a floured counter top, sprinkle flour on top and roll these out, fold it over itself 2-3 times (this adds flakey layers) sprinkle flour each time you fold. Roll this out to 1 inch and use a 3 inch biscuit cutter.

  5. Bake at 400 for 11-13 minutes.

  6. Serve with butter and jelly. Or place them on top of your favorite pot pie filling and bake until the are golden brown on top.

MINI EGGO WAFFLES (makes 16 mini waffles)

  • 2 cups flour

  • 1 tbsp baking powder

  • 2 tbsp sugar

  • 1 tsp vanilla

  • 1/3 cup milk

  • 2 eggs

  • 1/3 cup melted butter

  1. Pre-heat mini waffle maker. (I use the DASH brand mini waffle maker)

  2. Mix the eggs, sugar, milk and vanilla. Add in the flour and baking powder. Stir in the melted butter last.

  3. Mix until just combined.

  4. Each mini waffle is about 1/4 cup batter. Pour into you mini waffle maker.

  5. Serve with berries and maple syrup.

  6. I store this in the refrigerator for the week for the freezer. They reheat well!
